As discussed in April 10, 2016 Blog spring is the season of Kapha: ruled by earth and water. Kapha season is a time of strength and stability, but the heavy qualities of kapha can sometimes leave us feeling lethargic and unmotivated. To stay balanced choose warm, light and astringent foods to cleanse the body and purify the mind so you can optimize your potential to have a powerful spring season of exciting new beginnings!
This spring salad (feeds up to 5 people) can stand alone as a meal, or is great paired with a warm split pea, corn, lentil soup or curry.
*If you choose to use canned legumes and corn please choose an organic, low sodium brand such as Eden or Anna’s Organics.
1 large bunch black or green kale, chopped and steamed
2 cups cooked and strained lentils (soak overnight in water and 1 TBSP apple cider vinegar to reduce gas)
1 cup cooked and strained black eyed bean or black beans (soak overnight in water and 1 TBSP apple cider vinegar to reduce gas)
½ to 1 cup corn, boiled and sliced off the cob (optional)
1 cubed red pepper
1 cubed green pepper
1 cubed yellow pepper
¼ or 1/2 lightly steamed and finely chopped green or purple cabbage
½ cup sunflower seeds
1 handful dried, unsweetened, organic cranberries
1 sliced green onion
4 leaves sliced basil
1 bunch sliced cilantro
Rinse and prepare vegetables as listed above. If you experience digestive discomfort or gas when eating raw vegetables lightly steam or sauté in sesame oil the bell peppers, green onion, and snow peas. Place kale at the bottom of a large salad bowl, covering the bottom and in a circular pattern along the sides of the bowl. Put lentils and beans in the center. Add the steamed and slivered cabbage, bell peppers, corn, and snow peas. Sprinkle with cilantro, basil, green onion, sunflower seeds and cranberries on top to garnish.
Honey Ginger Dressing
¼ cup sesame or toasted sesame oil
juice of one organic lemon
1 TSP grated organic fresh ginger
1 TBSP organic apple cider vinegar
1 TBSP black chia seeds
1 TSP raw local honey
¼ tsp black pepper
1/4 tsp cinnamon
1 pinch cayenne pepper
Combine ingredients in a mason jar; seal and shake until mixed then pour over salad. Toss before serving.
Suggestion: to kindle your digestive fire sip warm water with fresh lemon while you enjoy this salad.
